The Estate Winery, located in Dry Creek Valley and home to Ferrari-Carano's Villa Fiore Wine Shop & Tasting Room, was built in 1981 and focuses on producing Ferrari-Carano's stellar white wines. At Ferrari-Carano, the grapes are harvested at night when temperatures are the coolest, giving them crisp and intense fruit flavors. From the moment the grapes enter the winery, the objective is to interpret the individual characteristics of each vineyard block, based on the growing techniques, soil, clonal differences, and flavor - a term for which in France is "Vigneron," or "Winemaker," in English.
The Fumé Blanc, Sonoma County, CA, is one of the first two wines Ferrari‐Carano ever made over 35 years ago, and it is comprised of Sauvignon Blanc grapes from Sonoma County. When the grapes arrive at the winery, each lot is gently crushed and pressed into stainless steel tanks for 48 hours of cold soaking. The juice is then transferred to either stainless steel tanks or older French oak barrels for fermentation.
This wine has delicious aromas and flavors of pineapple, lychee, peach, pear, honeydew melon, and a touch of minerality. It has bright acidity and freshness, while the subtle oak character adds body, complexity, and depth. The lively flavors of this wine go well with spicy and ethnic cuisines or simple seafood and poultry dishes, and it also holds up nicely with veal and pork.
